The CookingBites recipe challenge: leeks

Here's another one, then.Prásopíta (Greek leek pie)
For some reason or another, I recalled a visit to a Greek bakery in Maidstone, back in 2023. Apart from the delicious Greek coffee, they also had a dazzling array of pastries, both sweet and savoury. This leek pie was lunch for a day or two.
The original recipe does not include spinach, but I decided to put some in for contrast.

Funny thing, I saw this recipe just before this challenge was announced and thought that it sounded interesting.
A savory rather than sweet Muffin, never had one before, so let's give this recipe a whirl, shall we?

Leek Muffins

I tried one still warm from the oven.
These are very unusual Muffins indeed!
It's not that I don't care for them, it's just that I've never had one quite like this, very different.
I think as a side to a dinner would be nice, but on their own, meh, I don't know. Again, very different.
Oh, and let's throw into this "mix" that I have:
A) Never eaten Leeks, at least that I know of
B) Never cooked with Leeks before
I really wasn't sure what to expect.

It just popped into my head that I would probably put this Muffin the same class as say Garlic Bread, you know the Texas Toast sort.
A savory bread, yeah, that's it!!!
 
Oh, and let's throw into this "mix" that I have:

B) Never cooked with Leeks before
I really wasn't sure what to expect.
Part of the fun of cooking is trying new things and taking your tastebuds to unknown territories.

My second (of three):

Recipe - Roasted Leeks with Parsley

I saw this recipe and will freely admit the main thing that attracted me to it was the simplicity - it’s some leeks, some salt & pepper, some oil, and a little parsley…whack in the oven and you’re laughin’, mate (if I may borrow an annoying, overdone catchphrase from Jamie “Give It a Good Ol’ Stir” Oliver).

Given the ease, I wasn’t expecting the powerhouse of flavor this transformed into - into the oven went mild-mannered Clark Kent, and out of it burst Superman…it’s really that good!

MrsT’s comment: “Whatever this is, it’s one of the best things I’ve ever eaten!” - that about sums it up.

Mild…subtle…but a real dark horse on the plate. I served these with pork chops done in a brandy cream sauce and some little boiled potatoes…and the humble leek stole the show!

Ya know Morning Glory having Leeks as the ingredient this challenge has opened my eyes.
Never ate them never cooked with them before either, but I'm rethinking this vegetable.
Everyone's recipes do sound really delicious!
Now you just need to find a grocery store that sells them. :)
 
I use the green leek leaves for chicken stock. And I put the white part of leeks in my chicken soup.
I thought about that, but I just did a freezer inventory and have loads of homemade Chicken Stock that needs to get used up.
