Yes. I know what you mean - you just chomp into the egg and shove in a few crisps to go along with it. The crisps have a little vinegar on them, thanks to the pickled egg. It's not fine dining that's for sure.
But... now I have a need to elevate the combination into something special. Hmm.

My wife will be delighted. She loves pickled bologna, and I haven't made it in several years. (It's a Michigan thing)
How about some softly-boiled boiled baby red potatoes, tossed in a light vinegar dressing, with a mollet egg nestled in there?
