I have to think on this. My main corn recipes are the totally simple corn on the cob made later in the summer from local corn, or using store bought soft taco / tortilla wraps.

Craig mentioned tamales. I like those - maybe there's a challenge to try to make... I'll hop through my Mexican cook book for additional ideas.

Corn is an interesting ingredient, not something I use a lot but will put the thinking cap on.

Thank you. Like you, I rarely use corn which is partly why I chose it.
