Here comes another one: Potatoes with Yoghurt (Indian)
I'd venture a guess and say there's no other cuisine in the world that uses as much as Indian cuisine. Firstly, it helps to cool the spicy heat. Secondly, it adds creaminess with just a touch of acidity. This recipe (despite the addition of yoghurt) is very much in the Hindu tradition of not using onions, ginger or garlic - and yet it's divine.
I'll go out on a limb and say that, if you haven't got curry leaves or asafoetida, then don't worry. Omit them.
I'll go out on even another limb (only 2 left) and say you could actually make this recipe with curry powder.
Anyway; enough sacrificed limbs - enjoy the dish!
