The Heresy of Modifying a Traditional Recipe

If I am not wrong, this thread is not about only Carbonara.
Fave version of Paella? I've never made it, but I've eaten a lot of it, especially in Spain - needless to say. Like traditional recipes, it too has variations, although the basic ingredients are staples, otherwise I suppose it would be a different dish. I love the fact that it is rice-based with meat and fish together, brilliant.

I have only had paella in Spain. I know people around the world do all kinds of crazy things with it. The Spanish seem to be very protective of their paella.
