Things you miss due to no longer available or formula/recipe change

Moderator notice

For the record I mistakenly moved 15 posts out of this thread (that's the alert you received) stating with the PAcanis thread Things you miss due to no longer available or formula/recipe change

I was alerted to the fact I need more sleep, more caffeine and my steroids by the other moderators.

The move was un-done (forgot the notice to say they've been moved back - the kettle is boiling now) and the 15 posts moved back to their original thread. If you think your post(s) are in the wrong thread, this is where they were when I got to them this morning.

Ah... the original thread they were posted in.

Now I know.

Thanks.

One thing I miss is the vegetable marrow. Its virtually impossible to buy them anymore. That perky upstart, 'Little Miss courgette' has taken their place in British cooking.

Vegetables marrow is a type of green squash which grows very large (some about the size of a nice plump baby) and is rather watery in consistency. I absolutely love them. Cooked properly they are a tender, subtle delight.

Back to the discussion. I'm interested to know what is regarded as the ethical issue with veal, perhaps thus making it difficult to source.

I'm not going to say it's the way they are raised, in constrictive environments. It's all they have know after all.
But I used to work with an English fellow (Liverpool) who said the calves were walked over grates, their legs fell through, and they were slit by the man below. Thus the whiter meat from bleeding out while still alive.
Which I have been told by a vet, isn't a bad way to go. The bleeding out part.

It just seems a bit barbaric in a day when folks are looking for "free range" eggs.

But I am on the fence on this one.

For instance, I was told that in Germany you can no longer use live bait to fish with.
Where do we draw the line?

I still grow them. Dedicated marrow seeds, not overgrown courgettes. Once or twice a year we will have them stuffed. They're good like that.

Indeed, its an ethical minefield. Bleeding out is what happens with any meat labelled Halal, not only calves.

Here in the UK that practice is now regulated. So the animal should be stunned first.

They are good stuffed or unstuffed in my book. I have recipes.. if I could get them. And quite right, they are a separate thing, not overgrown courgettes.

I deleted my comment about it
