👩‍🍳Ingredients👨‍🍳 (serve 2)
4 pieces of Chicken Fillet
19 Oyster Mushrooms (Straw Mushrooms will be more authentic)
1 Onion
40g Galangal
1 stalk Lemongrass
3 Kaffir Lime Leaves
1 Thai Chili
a few sprigs of Coriander
1 can of Coconut Milk
350ml Water
2 tsp Fish Sauce
4 tsp Lime Juice


👩‍🍳Method👨‍🍳
1. slice the onion and boil it with 300ml water under low heat
2. cut galangal into small pieces
3. peel of the skin of lemongrass, smash the root a bit with the back of the knife, slice into small pieces (cutting on a diagonal)
4. chop the chili
5. tear kaffir lime leaves off and remove the tough center stem
5. add in galangal and lemongrass, boil them together with the onion
6. slice the chicken fillet into bite-size pieces
7. blanch the chicken fillet for 2 minutes
8. chop the coriander
9. cut the limes into half and squeeze the juice and remove the seed
10. remove the onion, galangal and lemongrass from the broth as we only need their flavour
11. add in coconut milk (remain low heat to prevent overcook the coconut milk)
12. add the remaining 50ml water
13. add in kaffir lime leaves, chili & chicken fillets
14. cover the lid and boil for 3 minutes
15. add in oyster mushrooms and cook for another 5 minutes
16. add in fish sauce and lime juice (adjust the amount according to your preference)
17. add in coriander and stir well
