I was looking for ideas to use up stale bread and some tomatoes. My favourite 'fish' casserole dish gave me the idea of adding anchovies. I served it with a crisp green salad. Its really simple to make. You need a shallow baking dish for this recipe.
Ingredients (serves 2)
500g tomatoes
100g Mozzarella cheese
50g tin of anchovies in oil
150g stale bread
6 pitted black 'greek style' olives
Oregano or thyme to sprinkle (I used dried)

Method
- Heat the oven to 180 C
- Cut the bread into small chunks and bake for 10 minutes or until crisp and golden.
- Slice the tomatoes into rounds.
- Place the croutons in the bottom of a shallow baking dish and pour over the oil from the tin of anchovies.
- Add the anchovies (cut into small pieces) then the tomatoes and the mozzarella (torn into chunks)
- Arrange the olives on top, sprinkle with oregano or thyme and bake for 25 minutes.
