Tropical Salad Garlic Bruschetta

A lightly toasted garlic baguette topped with colorful, sweet, tangy, and delicious tropical fruits is the perfect finger food or appetizer for any summer get-together or BBQ. They are simple, tasty, refreshing and very easy to prepare. Impress your guests with this vibrant & colorful Tropical Salad Garlic Bruschetta at your next gathering.

Ingredients:

1 Loaf Garlic Baguette
1/4 Cup Diced Mango, Pineapple & Mini Cucumber
1-2 Stalks Cilantro/Parsley
6 Cherry Tomatoes-dices
1 Tbsp Lemon Juice
Salt/black pepper (to taste)


Instructions:
  1. Slice baguette
  2. Slightly toast garlic baguette
  3. Prepare all the fruits & veggies.
  4. Roughly chop up fresh cilantro or parsley.
  5. Place all the prepared fruits, veggies & herb into a bowl.
  6. Add lemon juice, salt and black pepper to taste.
  7. Toss to mix.
  8. Take a piece of toasted garlic baguette and add a spoon or two of mixed salad on top of the toasted garlic baguettes

That looks very interesting! Reminds me, first of all, of an Indonesian fruit salad called "rudjak" - the difference would be a touch of fish sauce and some chiles.
Yesterday I worked with a chef who, when she makes fruit salad, adds a touch of Worcestershire Sauce. I didn´t believe it till I tried it - absolutely amazing.
