That looks a pretty good recipe.Going to kick off with the Mumbai Sandwich I saw here. Sounds tasty!
I made Mumbai sandwiches for a Street Food dinner a couple of years back, and we made the same for the Indian festival 3 months ago.
There are two important things I learned. Firstly., make sure you slather abundant chutney on the bread. Too little, and it tends to be a bit bland. Secondly, sprinkle abundant masala on each layer of the sandwich, and if you can find it, use black salt (namak) instead of ordinary salt. Grated cheese is fine, but a good thick slice of real Cheddar is better and, apparently, more authentic.
