What are you baking today (2025)?

I made my rye bread. I could see it was going to stick in the first pan so transferred it to another better prepped one and lost some of the "lift". It's still good albeit a little short... That's okay since I can cut roast to fit the bread. :whistling:

But I need fresh yeast.
Neither, it's just a glossy bottom of the crumpet with marg on it doing a very good impression of Marmite. (That crumpet moved when I put it down so the liquid surface moved sideways as it hit the griddle giving the impression of a fluid brown surface, but it isn't).

I'm working on a couple of different recipes. This batch is my own recipe Ginger and Lemon Biscuits (aka cookies), made with a mix of wholemeal spelt, ground almonds (aka almond flour), white spelt and soft dark brown sugar.
This was my second try at this flavour combination. The first batch were a little too firm/solid, but I seem to have fixed that in this batch.

I've never tried making american style pancakes, so much easier to buy ready made rather than stand at the stove cooking 'em.
But I've been thinking about it and I saw you can do sheet pan pancakes (yay), so I tried some.
I found a wholemeal pancake recipe, milk quantities seemed too high (and still were even after reducing). I did a partial switch of some flour as well.
I think they needed a bit more baking powder (I didn't try correct that after dumping in some more flour), and I think the oven would be better hotter - recipes gave mixed messages regarding heat and time.
They rose ok, were light, but a little cakey. Definitely did not get a pancake vibe from them.

Ssomehow I can't do pancakes but really like waffles. Your pan looks more like cake; I can see a non pancake vibe.
I like waffles better. I have a mini waffle maker. DD likes that one.

But I have a very old waffle maker that I got when mom passed away. The recipe book has one recipe that says, 'First slice your bread". This waffle maker is older than sliced bread! LOL Two nice big square waffles.

on the plus side I now have a good idea of the quantity of cake mix that fits in my small brownie tray. Useful if I decide to make a tray bake :happy:

I figure on buying a waffle maker, I spotted one with removable plates for cleaning (also has plates for sandwiches / panini's). I must get around to ordering that.

You've got a good one there! I had one of those mini ones and liked it since I could make ahead and freeze and then use the toaster to reheat but it eventually broke. Now I've a Cuisinart, with a thermostat!, that makes deep round ones. That's perfect since I'll eat one and then Pippi and Ozzie get the other one.

I mostly make yeasted waffles now since I have the time and it lends to a more creative experience.
