Just the name, and name preference. Pumpkin, pie pumpkin, squash - different names people like to use for the same thing depending on where they're from. Many varieties.What's the difference between a pumpkin and a pie pumpkin?

I've never used pumpkin in a pie. Tasted it once or twice and is definitely not open to repeat. I rather use pumpkin in a savoury way (Thai red curry comes to mind)
Me too. Nothing to write home about; just a pastry crust filled with stuff and loads of cinnamon, cloves, nutmeg and ginger.
Still, each to their own. Not a fan of British suet puddings, either!

A good pumpkin pie, which is a variation of custard tart, is a beautiful and delicate dessert, needs to be served with fresh barely sweetened whipped cream or a la mode with a scoop of best vanilla ice cream, and like everything, depends on how good the cook and ingredients are.
Good flaky or shortcrust pastry, good pumpkin, real cream or half and half and so on.

Follow up to this - my parents had a carving pumpkin they didn’t use, so I grabbed it. I’ll process it, give it a try, and report back here on how it tastes.Tasty’s correct - pie pumpkins are smaller and sweeter than carving pumpkins, as well as the cavity being smaller and the walls thicker.
Generally speaking, the only time that you’ll see pie pumpkins for sale here is leading up to Thanksgiving, and the only time you see carving pumpkins is leading up to Halloween.

I have roasted the seeds from both pie pumpkins and carving pumpkins before and found no discernible difference in taste, although the carving pumpkin seeds tend to be a bit larger.
