With apologies to @Rocklobster, this is a celery poutine. The fries are made from celery root, the gravy is the same way I normally make a gravy except I substituted celery for the mushrooms, and I topped it with Gorgonzola and celery leaves.

Here's the recipe for the celery gravy.

In retrospect, I might've used a milder cheese. But, raw celery pairs well with Gorgonzola, and the color of the cheese matched perfectly.

Don't worry, @ElizabethB: I will be posting recipes before the end of the day.
