Tell me more.Making sauerkraut balls
Think of them like Reuben bites minus pumpernickel or rye. I'm using ground corned beef, cream cheese, sauerkraut, Swiss cheese, and dried herbs (dried ranch dressing packets worked great last time). Mix it all together, make into balls,, roll in flour, dip in egg wash, and coat with bread crumbs. Some will be fried immediately and some will get frozen. Some people dip them in Thousand Island dressing when eating but I don't like that stuff so I use cocktail sauce or eat them plain. I don't remember measurements but I like less sauerkraut than traditional recipes. Some people use ham instead of corned beef. Most don't use any cheese in them.Tell me more.
I don't do anything special really, I just used Google and found some recipes and took the stuff I liked and combined them. I also up the amount of garlic a bit and use 37 pounds of feta and a bunch of fresh dill. They look wonderful! Care to share your recipe?
I agree. The restaurant or frozen aren't very good. Usually bland. I used to make what I call mini spinach pies. Until the arthritis got bad.
My recipe filling (I add lemon juice, grated Italian hard cheese, onion, feta, butter, and hot sauce) is very flavorful. The crust/phillo dough is buttery and crispy. (I don't use sesame seeds) I also add lemon juice and hot sauce to the brushing butter.

Now I use the same filling (and lots of butter, LOL) but make it in the square shape Spanakopita.

Oh man I saw a recipe like that once. A long time ago, it might have been on DDD, but I remembered that they looked delicious.Think of them like Reuben bites minus pumpernickel or rye. Yes, they are an Akron, OH invention. I'd never eaten one til I moved here and I don't like sauerkraut, so I wasn't impressed. If ordered out at a restaurant i don't like them usually. My DH loves them so I figured I'd try to make them at home, and I do like the way I make mine.Oh man I saw a recipe like that once.
