I've read online that baramundi is easily farmed, but is still very expensive.

I don't mind the wild caught stuff, but I find the farmed version a bit muddy tasting.

Odd, it is just the opposite with catfish in the US. The farmed catfish is much cleaner tasting.

Probably should have clarified I prefer wild barramundi that's caught in saltwater. Barramundi are catadromous, can live in salt or fresh water....so I guess a wild one caught in a muddy fresh water creek would have that muddy taste too. Anyway, I shouldn't talk about something I rarely eat anyway.

I picked up a nice, thick NY Strip steak today. I cooked it sous vide, then seared it. Medium rare, of course. No photo... I've posted several steak photos before, and this one is no different.

It took me half a lifetime to figure it out but I prefer saltwater fish. Period.

The exception is fresh water fish that is caught & cooked immediately. The only way is to be camping & fishing. One of my most memorable fish meals was a breakfast of Murray Cod at our family campsite just out of Rutherglen.
