vegan tomato pesto

Just curious, because I love tomato pesto and sometimes make it with sundried tomatoes.
What makes it vegan; or am I missing something?

Pesto usually contains hard cheese such as Parmesan, so isn't vegan.

With a garlic, mint, chili yoghurt sauce.
I'm happy...

Of course!! I'd forgotten that.
I have had some really excellent vegan parmesan here in Caracas.
I'll have to look up my recipe for tomato pesto to see if I just used nuts, or added parmesan as well.

For lunch I had a bowl of left over pasta - it usually tastes better the second day anyway

Didn't feel like cooking anything, so I convinced DH that we needed to go to our favorite little joint maybe three towns away.
(mostly gone) A slice of cheese Pizza, a Philly-style Cheesesteak sandwich with a bag of chips and a fully-loaded Calzone... we shared and took home half of everything, included in the mix, a side order of Meatballs in Red Sauce for tomorrow's Sunday Pasta Supper.
Iced Tea for DH and a nice Red Wine for Moi.

Salad and then purchased butternut squash ravioli, with a brown butter/sage sauce.

I mixed the left over yoghurt "sauce" with cubed gherkin and smoked chicken.

Same as yesterday only not as much, so I had some vegan brioche baps, with vegan tomato pesto and vegan created cheese, zapped for 1 minute in the microwave. Aka pizza toast normally!
