Decided to be brave and tried out a new vegan tofu sandwich. Raw tofu tossed with hummus/dijon dressing, I topped mine with some tomatoes. I wanted to add pickles but husband had eaten them all! It tasted surprisingly good - a little reminiscent of egg salad.
I agree. I made a batch last week that turned out amazing.
