What did you cook or eat today? (January 2026)

Another wet miserable day. Looked in pantry and found a tin of creamed corn. I know there's ham.in the fridge.
A sammy then with lots of pepper.
Shirl is back at work Monday so back to proper meals.
Was good plus enough ham for tomorrow.

and we have another storm coming our way tomorrow, so I made of pot of My Loaded Potato Soup for moi and Chicken Noddle for DH... they don't photograph well, but you know what I mean...

I’ve missed seeing the creamed corn sandwiches! Huzzah!
 
For breakfast this morning for DH

A hard-fried Egg, Swiss Cheese and a Trader Joe's Chicken Breakfast Sausage Patty all on a nice and soft Brioche bun.
I cut everything up for DH so that he has an easier time of eating/biting.
Oh, baby Marzano Tomatoes, again cut up and not pictured is a small bowl of canned pitted Lychee and a glass of Cranberry juice.

[Edit] This was a huge batch that I set out back to cool overnight. I'll freeze half of it, if nature doesn't freeze it all overnight, lol.

I’m from Ohio, so forget all that stuff about “real chili doesn’t have beans,” and “real chili doesn’t use ground meat,” - that just looks like good “from round these parts” chili!

I like pretty much all chili, from authentic Texas Red chili with cubed chuck roast, and ancho, guajillo, and morita chilis, and no tomatoes or beans, to "Pennsyltucky" chili, where you brown some ground beef and maybe some pork, and then start popping can lids, lol. The latter is certainly quicker for a weeknight dinner. 👍
