I had some leftover shrimp (cooked with lemon, butter, garlic, parmesan cheese) and some leftover Chilean sea bass from a few recent dinners, so I sauteed a bunch of button mushrooms with some diced red bell pepper, shallot, and spinach, then used that with some shredded parm and goat cheese as a filling for an overstuffed American omelet. No pics because it looks like all my other omelets, LOL. DH just ate his 2/3rds and said it's phenomenal. It's only 4:07pm here, a little early for breakfast, eh? I might wait til 4:30 to eat my portion.
