What did you cook or eat today (June 2025)?

I had some of the seafood and spinach mixture leftover from yesterday's omelet so I made another omelet today for our 4pm brunch.

Got some black beans going in the slow cooker/crock pot. We are having chicken /tacosfajitas tonight. I may or may not make some cilantro lime rice, but I will definitely make some homemade fresh tomato salsa.

My tomatoes are starting to blush. The Big Beef F1s are averaging in at 1/2 lb. or so. 👏

It's Monday morning here just 2 bits of shortbread my daughter dropped off yesterday when she was here.
And a cuppa earl Grey.
Last night we had Indian feast
Samosas meat and vegetables and bhajees with rhaita and tamarind sauce
Naans and butter chicken 🐔
Daughter also bought banana cake for dessert 🍨

We had pancakes for breakfast. Then, tostadas for lunch (late lunch, because of the Emergency Room).
I might be hungry in an hour or so, in which case, a bit of Humboldt Fog goat's cheese and some fig chutney.
 
Here's my take using some wheat berries instead of rice. Sauce could've been a bit thinner but it was still really good and filling. Had some leftovers so that'll be breakfast, with an egg no doubt.View attachment 130137

Indonesian food is often very easy to make low carb if you leave out the rice.
