A non traditional soubise using wine, bacon grease, scallions, fennel, cream, parm R, the bacon pieces obviously and orecchiette.

Last nights dinner was a five layer toasty (three cheese layers two smoked pork) wrapped in smoked bacon and served with slaw. The bread was made with 25% rye flour and caraway seeds. We make it just for toast and toasty's so it doesn't leak.

I will have New England clam chowder today.

The photo is from the last time I made this meal, earlier this year. I love clam chowder and the ingredients for today's chowder are exactly the same as before.
