Today’s lunch: chickpea-avocado smashed sandwich with carrot ribbons, tomato, and cucumber.
I was so thrilled to find some stray scallions growing in the garden, so I threw a couple in.

My son appeared unexpectedly late morning and then cooked us lunch!

Yeah we had a big dinner night before (dinner club) plus I didn't feel.like cooking.
