Turkey sandwich from the little store that opened recently, about 15 minutes away:

Also got some homemade toasted coconut marshmallows, homemade jellied nougats, dried apple rings, and a big piece of homemade German chocolate cake.

Its s shame but we don't get Turkey white meat here at the deli. We buy a roll of it at xmas. I love it with cranberry jelly.

For ease, add per last night. Leek and mushroom gratin (and yes, there's more yet. It needed 2 leeks, hubby bought 6. So I cooked six and he asked why!)

I spent a totally useless 2 hours trying to make Thai fishcakes (thod mun pla). The first hour was spent making red curry, which eventually turned out ok. The fishcakes, however, were dreadful.
Next time (oh no, I'm not giving up just yet) I'm going to buy some fresh fish (this lot was frozen), and use a stronger flavoured fish (I used red snapper). More coriander stalks and roots (there was one shrunken root only in the fridge) and definitely look for dried shrimp. Cornflour, not rice flour in the mixture.
Mr Porky was happy though, because he got a fish supper.
I'm happy with a disaster, because if you don't make mistakes, that means you've never tried anything new.

I always add a splosh of fish sauce to that sort of thing.
I often get asked about my fish dishes (especially prawn cocktail, fish pie and fishcakes) cos the flavour is joyfully emboldened by that gloriously powerful stuff.

Yes - in fact, it's a Thai brand I've got in the cupboard.
My simple recipe from a Thai cooking school uses white fish fillet, egg, makrut lime leaves, yard long beans, fish sauce, red chili and red curry paste.
And oil for frying
Yep, that's basically what I used, although no long beans - I added chopped broccoli because it was all I had!
The recipe I used was by Ken Hom who, while he's not Thai, is a fearsomely good cook, so I'm thinking it was probably me who screwed up somewhere!
