I had pulled pork (with soy sauce) tacos on corn soft tortillas with Monterey jack cheese, shredded red cabbage, shredded carrot, avocado, and some diced scallions (from my garden). Quite tasty.

Following Barriehie's post of frozen, does anyone DIY freeze them?

Yes, but chunks won't hold shape if you mix them in with something. You can freeze whole, at least the Haas ones. When we had a tree of the smooth skinned ones, a friend of mine would load up, mash, freeze in individual portion sizes, then bag for later use.

Tried a new recipe, one pot taco Mac and cheese. Tweaked original recipe some, and with a couple more tweaks should be a really good comfort food recipe. I prettied up my bowl as best I could with something like that, then walked away to do something before I took a picture, came back and mixed everything together, then realized I hadn't taken the picture.

I lit my charcoal fire for chicken.
Already prepped and half cooked an onion tomato red pepper garlic "sauce".
It will still get sprouts and basil added.
Not sure yet if I char the chicken and finish in the sauce or if I keep it separate
