I've developed laryngitis. So I will be having rose hip and hibiscus tea (steeped loose leaves) with honey. And probably Lipton chicken noodle soup (with scrambled egg threads).
Tazo has a tea that's similar to that, and I make it whenever I feel crappy, and add some honey and lemon to it, and it's delicious. It smells amazing.
 
Took my Mother for her bi-weekly beautification appointment aka hair dresser and then out for lunch.

We went out last night. I had shrimp scampi with linguine. They use 6 huge shrimp and thick garlic slices they roast in oil in oven. I always ask for a few slices of lemon and squeeze over top. Craig had bolognese with rigatoni. He was a bit disappointed because he only tasted ground beef, and nothing else. The sauce was very meat centric, but just the ground beef. Garlic rolls of course, lots and lots of garlic and oil. Soups to start, though I ordered mine to go, stracciatella, and will be having that and a garlic roll for brunch soon. Craig had minestrone last night and had a garlic roll or 2, plus half of my scampi we brought home for breakfast. No pics.

Mixed leftover lemon cake crumbs with orange juice, pulp, eggs , vanilla and custard and baked it for 30 minutes.
This kind of looks like how I make my cornbread. I like my cornbread moist. I find that there are too many restaurants that have cornbread that's too dry. Is it supposed to be dry? Isn't cornbread a Southern thing? Do we need Barriehie to tell us how it's done? This cake looks so good and zesty.

I'm a southern girl. No, cornbread shouldn't be dry, unless you are using it in a dressing/stuffing. My family's dressing/stuffing was a dry, no sugar added cornbread, decent white bread in equal amounts, crumbled, uncooked equal amounts onions and celery (though I parcooked them in butter when I started making it), some eggs, poultry seasoning, turkey stock, S&P.

Eating cornbread always had a little sugar, more eggs and oil or butter so it was moist, plus butter on table for those that wanted. Now, I usually add some corn kernels, jalapeños in half for Craig, and sometimes some cheese of some kind.

This is exactly what I do. I add a can of cream corn to help with moisture, and love using jalapenos and cheddar. I finish with a sprinkle of brown sugar on top. I love it.
