Home made vegetable soup for lunch with Quorn pieces in it. Tonight is a rather slight burger (Bird's Eye original) no bun, with mushy peas and a few oven chips. I'm definitely reverting to childhood food. Not that I had Quorn or oven chips back then.

She wanted some of my Pickled Red Onion and Pickled Jalapenos to give as gifts.

I don't know why, but it hit me... I haven't been sterilizing the jars these past, what, two times that I've made this just for her ... OH MY GAWD!!!
I could killed someone! GEEZZZZZ!!!

Yes, it's a ACV, water, sugar, salt mixture and I add into the bottoms of the jars some Garlic and then some Black Peppercorns, Mustard & Celery Seeds to the Red Onions

I've neglected to washing sometimes but then I'm pouring boiling vinegar, mostly, in there. I keep meaning to get some pH test strips but I'm still here...

(Probably not a best practice to not wash.)

This recipe I'm using is for Pickled Red Onion and we liked the brine so much, I use if for the Jalapenos too.
It's not a boiled brine, just "hot water", I dissolve the salt & sugar first and then add the ACV.

There's lots of links out there but as long as your using a 1:1 on vinegar and water, by volume, and at least a 5% vinegar you should be alright.

What was on the table for brunch with my Neighborhood Gal Pal today:

Guava Mimosa to start. I think they just whispered cheap sparkling wine over the top, it was very Guava forward.

Chilaquiles with Green Sauce and American-style Scrambled Eggs on top for NGP

Chicken Saltimbocca Sandwich with a side Salad for Moi.
Very tasty and I love catching up with her... our mom's both live in the same Senior Living Community and are going the same trials and tribulations, so we compare notes and boost each other up.

Off topic. I love guava juice, make me look forward to my Hawaii trip. Of all the tropical fruit in Hawaii, Hawaiian papaya is my favorite. I get 5-6 per week when I’m there.
