I've been commissioned by Mrs. Next Door Neighbor.
She wanted some of my Pickled Red Onion and Pickled Jalapenos to give as gifts.

I don't know why, but it hit me... I haven't been sterilizing the jars these past, what, two times that I've made this just for her ... :ohmy: OH MY GAWD!!!
I could killed someone! GEEZZZZZ!!!

Are they packed in vinegar?
 
I've neglected to washing sometimes but then I'm pouring boiling vinegar, mostly, in there. I keep meaning to get some pH test strips but I'm still here...

(Probably not a best practice to not wash.)
 
This recipe I'm using is for Pickled Red Onion and we liked the brine so much, I use if for the Jalapenos too.
It's not a boiled brine, just "hot water", I dissolve the salt & sugar first and then add the ACV.
There's lots of links out there but as long as your using a 1:1 on vinegar and water, by volume, and at least a 5% vinegar you should be alright.

Chicken Saltimbocca Sandwich with a side Salad for Moi.
Very tasty and I love catching up with her... our mom's both live in the same Senior Living Community and are going the same trials and tribulations, so we compare notes and boost each other up.
