Making Ragù alla Bolognese for Sunday lunch

View attachment 74200

Changed my mind in the making and added peas, thus this is no longer a Bolognese Ragù but it’s a Sicilian Ragù.

Sunday roast here = boneless leg of pork.

The meat was rubbed with pounded sage & garlic then sat on a big bed of onion, garlic, fennel, apple & sage tossed with white wine & evoo. That became the base for amazing gravy. Seriously good. Ate it with a fork.

Roasted sweet potato, potato, carrot & cauliflower.
Steamed choko with butter & lemon.

Oh & perfect crackling.

I catered a lunch party yesterday and they asked for Rijsttafel, so that´s what they got.
One of the offerings was Panada Ikan Pedas (NO idea how to pronounce that, or what it means), basically an "empanada" or turnover, with a pizza-type dough and a spicy tuna filling. So there was some dough & filling left over, and that´s what I had for breakfast.

The dough is made with flour, yeast, pinch of salt, sugar and coconut milk. Interesting! The filling is spicy tuna.
They´re not difficult to make and they´re a great snack or party piece. I´ll post the recipe later.
