Craig had on DDD yesterday and 1 of the places made a knife and fork burger with a gruyere cheese slice, a parm and gruyere mornay sauce, and a peppercorn sauce, plus some fried onion strings IIRC. Your lovely sauce reminded me. Personally, I'd skip the bun, too much bread, maybe just use a piece of Texas toast on the bottom.

Sauté the onion first. Take some out, put in ziploc bag and freeze.The onions are out of the way.
