I never see guanciale at my grocery store, they have a section for meats and cheeses that are more "uncommon" and I never see it there. I just use a good quality, thick cut, smokey bacon.

Pork belly is a good sub but it doesn't come with the pepper...

I dry fried some peanuts and added them + eggs to my left over nasi goreng.
A bit of a weird dish, but it was very tasty

The white stuff upper left hand side are pickled onions
