What did you cook or eat today? (October 2025)

For my tea this evening I had pressure cooked gammon, cheesy leeks and the most amazing gravy I have ever tasted!

500ml OXO beef stock, 2 chopped carrots, 3 chopped onions, 4 bay leaves and a dash of gravy browning (along with the juices of the gammon) made the most amazing gravy, so good that I'm going to freeze the leftovers for use another day!
 
I just compiled a to-go container with copycat Chipotle for my DH's aunt (cilantro lime rice, black beans, adobo marinated chicken, fajita peppers and onions, Monterey Jack cheese, sour cream, and fresh tomato salsa). I am running it by to her in a few hours. She will probably be able to get two meals out of it. She had a mild stroke while she was driving a little over a month ago and wrecked her car, fracturing some ribs, a vertebra, and two fingers on her right hand (and she is right handed) so she is walking with a cane and can't stand up for very long periods of time. She was released from the rehab facility right after we had left for vacation. She lives alone. Her daughter lives in Nashville, Tennessee, which is about 7 hours drive away. She has a home health aide that stops by regularly and she gets picked up for her PT and other doctor appointments, but I am guessing that frozen microwave dinners are getting old and she will enjoy some good food. I will go by and see her again on Wednesday and bring her something different.

I had a recipe pop up on YT in my recommended list. I'm guessing YT's algorithm is picking up on the word Italian in a lot of the recent recipes I've been looking at. As this one is called Italian Hot Chocolate.

All I can say is I won't be having a chocolate craving anytime soon.

Chocolate, cocoa powder, milk, sugar with a little salt and corn starch.
Smooth and creamy.

And since it was so close to noon, about half an airplane bottle of peppermint schnapps :D

I’ve been down every egg poaching road there is including the silicone ones. The eggs still stick (so you need non-stick spray) and the lack of contact with the water means to me they don’t taste poached, particularly the top.

But the clingfilm method has advantages too. I think I just need a little practice at it.

I'm intrigued by these and watched the little video of how they work. The results look OK and I might check them out. My cupboards are getting a bit cluttered though. :/

I've used Kenji's 'strain' method in the past that has been fairly consistent.

Yes if you don’t strain the eggs then the whispy stuff does come out of the holes but Im not too fussed about it.
