What did you cook or eat today (September 2025)?

Had a salad with lettuce, lightly seared courgette flowers, tomato, shaved Parmigiano and crostini

The flavours. The spices were very lacking.
I just took a look at the recipe. First of all, I'd never use leek or celery in a curry. Just not right. That's like making tacos using Wonderloaf.
2 onions for that, and I don't understand why there's no ginger in there. Rhubarb & ginger go so well together. Chile peppers seriously lacking. I'd double the amount of spices, and add a tsp of garam masala near the end.

Sorry theres no pic but tbh it wouldn’t have done it justice anyway.
One of Max’s Sandwich Shop recipes, ‘The Original Gangster’
It went down a storm. The beef was supposed to do two days but it was a bit too successful and now I don’t have any beef left!

It was -
Focaccia
Braising steak slow cooked in beer, soy sauce, fish sauce, carrots onion, doenjang, ginger and a bulb of garlic. Then roughly shredded.
Parsley
Quick pickled onion (red onion sliced super thin and left for 30mins in lemon juice and salt to take the edge of the onion).
Sauerkraut
Caraway seeds
Cassava Chips (Crisps)
Gravy Mayonnaise.

I was nervous, I thought the combo sounded on the edge of reason but I needn’t have worried it was wonderful.

That one looks pretty darn spot on! 👍
I'd up the tomato paste a bit. When I make mine I always peel the tomatoes before using. Something about tomato skin curls in the bowl doesn't work for me.
If I can't find seafood stock, can I use vegetable stock or chicken stock?

Started having a sore throat last evening. Had orange juice. This morning, completely stuffed head and no energy. I'll probably have Lipton chicken noodle soup with egg (scrambled egg added at the end of cooking to make strings/threads) for dinner.
I feel like $h!t as well today, I have no energy and have a globus I'm trying to get to go away.
