I was a busy boy today. I made a homemade pepper vinegar sauce, tacos for dinner and also coconut shrimp paired with an orange marmalade dipping sauce. And for dessert, homemade chia pudding.

It's going to vary from region to region. My grandma made hers with black-eyed peas, ham hocks, onions, bell peppers (green, ugh--I picked them out) and rice. I think you can vary your peas/beans if you want. I like to use limas (sometimes), bacon or ham (cooked to falling apart with the ham), and red bell peppers over wild rice, served with mustard greens and cornbread.I know I could look up what Hoppin' John is but....
Mine isn't far off of what JAS_OH1 said. Black eyed peas with a mirpoix of bell peppers, onions, and celery. The grease the mirpoix is cooked in I get from slowly cooking down guanciale. Ham hocks, at least around here, aren't worth buying anymore. Zip for meat; a layer of skin and some connective tissue.I know I could look up what Hoppin' John is but....

Yes to smoked pork chops! I can get those at Morelo's Market for around $2 and they're mostly meat.I started buying the smoked pork chops because the ham hocks are the same way here.
My grandmother used the same vegetables but cooked in bacon grease, plus a ham hock or 2 or 3.

We sat in the breakfast room, which was empty, and enjoyed our supper.
I've had some pretty bad meals in European hotels, so bad I've left the hotel to get a decent meal.Amazes me that in European countries dinner at a hotel is a treat. In America dinner at a hotel means you have no means of transportation.
