Yeah, it has many different spellings as most Thai has due to using a different alphabet.I found this recipe for chicken pat prik khing. I'm looking in my True Thai recipe book by Victor Sodsook and it has a classic red curry paste recipe that I've made before so I'll make that one. I can't find a recipe for pat prik khing in there or maybe it's spelled differently.
Bit late in the day to start grinding out curry paste so I'll start that tomorrow morning.

I had a rib-eye pan steak last night, but used the grill for the baked potatoes. Green beans done in my usual way of steaming a little, then saute with virgin coconut oil and herbs de provence. Used up the last of the crimini mushrooms.
