What did you cook or eat today (September 2025)?

The bananas have to be ripe as well. Can't tell if the black is from cooking or if they were, in fact, ripe. I use some brown sugar, besides salt and vanilla, plus I usually add some chopped pecans to give them a Bananas Foster vibe.
The bananas were perfectly fine. It's like pineapple, I love it, and I love pizza (big surprise) but I just do not like the two together. The same goes for banana pancakes. I would much rather have done blueberry pancakes instead.

Kirkland lightly breaded Chicken Chunks done in the AF, chopped veggies and some homemade Copycat Raising Cane Sauce - MAN!!!
I think I'll keep a small jar of that stuff in the `fridge from now on, it's that good, but not for DH.
Tried it this morning on my Freezer-Friendly Everything Bagel Biscuit Bombs - now that's the bomb!!

I made 4 kgs of Aloo Ghobi (potatoes with cauliflower) this morning, checked all the flavours of the other dishes, supervised 4 kgs of green mango chutney, made sure the aubergines were properly cooked (not raw at the ends) for the baingan ka salaan (Hyderabadi aubergines) and then went out front to help the clients negotiate our menu :laugh: .
Pork vindaloo, the lamb rogan josh, the butter chicken and the chemeen pappas (shrimp in coconut milk) all sold well. The pani puri went down a treat. Probably no more than 50 covers today, so it was fairly quiet. Tomorrow the 💩 hits the fan - there may be 300 covers.
But we're covered. The executive chef really knows his bacon and knows his clients. He's prepared 50 rations of the proteins , we've got over a hundred each of our samosas, pakoras (bhajis) and vadas, plus loads of chutney.
Looking forward to a really full service tomorrow!

The recipe is from Pillsbury and it's a bit fussy, but once I got the hang of it (aka actually read the recipe all the way through) it was great.
I made a double batch of it this time around and stashed them in the freezer.
They re-heat sooooooooooo much better in the Air Fryer!
