I came across this recipe whilst looking at some olive trees for adoption... don't ask but here is the story (https://www.cookingbites.com/threads/would-you-adopt-an-olive-tree.6628/) and since I really like wheat berries and chickpeas, the recipe appealed to me. I would have to ditch the feta being allergic to dairy which would chance the taste quite a bit, but here is the salad for everyone else.

WHEAT BERRY SALAD
Serves 6-8
Ingredients:
7 cups water
2 cups red hard wheat berries, rinsed and drained
2 tbsp red wine vinegar
Juice from 1/2 lemon
1/4 tsp garlic powder
1/2 cup extra virgin olive oil
salt and pepper, to taste
2 (15 oz.) cans chickpeas, rinsed and drained
1 large cucumber, chopped (about 2 cups)
1 cup crumbled feta
1/2 cup chopped red onion
1/2 cup chopped pistachios
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint

WHEAT BERRY SALAD
Serves 6-8
Ingredients:
7 cups water
2 cups red hard wheat berries, rinsed and drained
2 tbsp red wine vinegar
Juice from 1/2 lemon
1/4 tsp garlic powder
1/2 cup extra virgin olive oil
salt and pepper, to taste
2 (15 oz.) cans chickpeas, rinsed and drained
1 large cucumber, chopped (about 2 cups)
1 cup crumbled feta
1/2 cup chopped red onion
1/2 cup chopped pistachios
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
Directions:
- Place water and wheat berries in a large sauce pan. Bring to a boil, cover and reduce heat to a simmer. Cook for an hour or until tender. Drain excess water and transfer to a bowl to cool.
- While wheat berries are cooling, in a small bowl whisk together the vinegar, lemon juice, and garlic powder. Slowly whisk in olive oil until emulsified (or shake in a jar with a lid). Allow to sit at room temperature.
- Once wheat berries have cooled, toss with garbanzo beans, cucumber, feta, red onion, pistachios, parsley, and mint.
- When ready to serve, pour dressing over the top. Toss well and serve at room temperature.
