This is a classic “what should I make for lunch/dinner - oh look there’s a zucchini in the garden” dish for me.
Ingredients:
1 medium zucchini, grated
1 green onion, chopped
1/4 cup crumbled feta cheese
1 egg
1/4 cup all purpose flour
Olive oil, for frying
Sour cream, for serving
Mix your zucchini, onion, feta, egg and flour in a bowl. Heat up a pan over medium-high heat, and add a bit of oil (I shallow-fry these and use a minimal amount of oil). Dollop the batter into the pan, flattening the fritters with the back of a spoon. Fry until golden brown, then flip and fry the other side. Serve with sour cream. Makes about 6.
