Beetroot

Why get rid of the muck? The big brains are saying the dirt is good for you and acts as a shield for the stomach. So bring out the muck. What I will tell you is this. The next time I have some beets I will be having a raw bit or bite......minus the muck in the first instance.
Tends to have a bit more than that when pulled though.
 
Back on the subject of beetroot, I have a fondness for cheese and beetroot sandwiches. Preferably, a good tangy cheddar (though a crumbly Lancashire or Wensleydale isn't a bad option) in a crusty baguette. Proper beetroot, of course; none of this pickled grot.
