It's just plain all-purpose or Tempora flour with a little bi-carb made into a batter by adding fizzy lager (because that's all I have).
 
Fat is often the tastiest part of the meat, but due to both misguided health guidelines and intensive production methods most commercial meat is produced with minimal fat content, especially pork. At least in Europe not sure what the situation is like in Thailand. Can you obtain decent stuff direct from the farm over there?

This is an example of the pork loin that we obtain from the supermarket butcher (This will be the base for stir fried pork and honey tomorrow).

The recipe I use involves an overnight soak in seasoned buttermilk.

I made blackened Mahi Mahi Reubens again today. We forgot to buy Swiss cheese, so I used low moisture mozzarella on 3 of them, and my wife's special healthy (plastic) shredded mozzarella on her's. It's easy to tell which one is not like the others.

We actually liked the mozz better on them rather than the Swiss.
