tamarind

Tamarind (Tamarindus indica) is a leguminous tree (family Fabaceae) bearing edible fruit that is indigenous to tropical Africa. The genus Tamarindus is monotypic, meaning that it contains only this species.
The tamarind tree produces pod-like fruit that contains a brown, edible pulp used in cuisines around the world. The pulp is also used in traditional medicine and as a metal polish. The tree's wood can be used for woodworking and tamarind seed oil can be extracted from the seeds. Tamarind's tender young leaves are used in Indian cuisine, especially in Andhra Pradesh and Telangana. Because tamarind has multiple uses, it is cultivated around the world in tropical and subtropical zones.

    Recipe Pineapple Tamarind Chutney

There's pineapple in this chutney. Mango, too. No, really. Check the recipe below if you don't believe it. The darker hues are due to other ingredients, particularly the tamarind paste. There's a lot going on here...maybe too much. You may also notice some improvisation in the brown sugar. But...

Recipe Celeriac, Carrot & Fennel Bake with a Ginger & Tamarind Dressing

I came across this recipe in one of my middle eastern cookbooks, Persepolis by Sally Butcher. I've halved the ingredients, so that it now serves 4 as a hot lunch salad. I'll give you warning now, this recipe will need a very large roasting pan. I ended up using the grill pan (UK term)...

    Recipe Keralan style tomato curry

Keralan cooking often uses tamarind and coconut milk in curry dishes. This particular dish doesn’t include coconut milk but has a hot, sour and aromatic flavour reminiscent of Keralan cuisine. To me, one important thing here is the slicing of the onions and tomatoes into ‘petals’. If you simply...

    Recipe Tamarind (Imli) Chutney

I posted this on another forum and thought it might go down well over here, too. I use this chutney for fried snacks: samosas, pakora, little turnovers, croquettes, meatballs, falafel, etc. A chutney is basically a spicy marmalade. chatni in Hindi means "to lick", so basically this is something...

Recipe Purple Aloo Gobi with Tamarind and Dates

Tamarind and dates are often associated with Middle Eastern cooking but both are also used in Indian recipes. This recipe is based on the well-known Punjabi dish ‘Aloo Gobi’ or potato and cauliflower curry. Here, I’ve used purple potatoes instead of white potatoes, but you could use either...
