A sweet, salty and sour salad. I've been experimenting with dates and with blood oranges and so I have rather a lot of both to use up. And then there was the avocado in the fridge which had reached its peak. Now it has to be said, that I am not a fan of avocados , so this is a labour of love! The salad combines the tried and tested combination of avocado and bacon with sweet dates and slightly sour blood oranges and lime. Some beautiful Orange Rapture tomatoes were added too. To ramp up the sour aspect, you could leave on the rind if the blood oranges, as long as they are very thinly sliced.
Ingredients (per person)
A handful of crisp lettuce
5 Orange Rapture tomatoes (or use any baby tomato)
3 rashers of streaky bacon
1/2 ripe avocado
3 large Medjoul dates (pitted)
1/2 a lime
1/2 a blood orange
Olive oil

Method
- Fry the bacon until just crisp and cut into bite sized pieces.
- Cut the tomatoes into halves or quarters (depending on size).
- Cut the dates into quarters, lengthwise.
- Cut the peeled avocado into slices.
- Cut the blood orange into thin slices, removing pith and rind (optional)
- Assemble the salad, reserving the bacon pieces for the top.
- Squeeze the lime over the salad and add the bacon.
- Sprinkle with olive oil and the juices from the bacon pan.
