Recipe Baked onion stuffed with cheese and pine nuts

An easy recipe. I used some off-cut strips of puff pastry to surround the onion but this is not necessary.

Ingredients

Large onion
Soft cheese (I used blue brie)
Pine nuts (you could use flaked almonds)

Method

  • Peel the onion and slice a small piece from top and bottom, wrap tightly in foil and bake at 170 C for 1 1/2 hours.
  • Unwrap the onion and place on a non stick baking tray .
  • Poke your finger into the middle of the onion to form a pocket (the onion should be completely soft).
  • Stuff the pocket with soft cheese such as brie and top with pine-nuts or almonds.
  • Bake at 180 C for 20 minutes.

Sounds good to me and I like the pastry. I don't have the cheese that you mentioned but my cheddar serves me well for almost anything.
