Baked potato

I often have what we call mini baked potatoes. At the end of the season when I harvest my home grown potatoes, they'll be a lot of small, 2 or 3 bite sized spuds. So I bake the lot of them because they don't store well. They can also be baked tossed in olive oil, salt and pepper, or sprinkled with rosemary.

I like to coat with EVOO and then sprinkle with kosher salt before baking. The skins are awesome this way or you can save them, the skins, for later and top with cheese. 🤤
 
Baked potatoes are definitely underrated.
When I was a kid and it was Guy Fawkes night (5th November), we'd always build a fire in the back garden (or someone else's back garden) and wrap loads of potatoes in foil. Dump them in the fire embers, then, when all the fireworks were done, we'd have something yummy to eat.
Nowadays I suppose the "problem" is that you have to plan ahead; at least 90 minutes in the oven.
I snaffled 3 small ones on Saturday, with some chile con carne, butter, more butter, salt, and some cream. Made in heaven.
