Recipe Barely 'Trottery' Vegetable Soup

Ingredients
  • 1/2 pig's foot cut into thirds (about 12 oz.)
  • 1/2 cup jellied bone broth
  • 1/2 onion, diced and caramelized
  • 1 carrot, sliced into rounds
  • 2 celery stalks, sliced
  • 1/2 lemon
  • 1 roasted large chili, skin removed and diced
  • 2 cayenne chilies, diced
  • several cloves of garlic, smashed
  • 1 tsp of Italian Seasoning
  • Soy sauce to taste and for color
  • Worcestershire sauce to taste
  • S & P to taste
  • Bouillon cube, I used goat
  • Water

Method

Gather your ingredients.

Take your thawed trotters and place in your pressure cooker. Add in 2 cups of water and your bouillon cube.

Cook for 40 minutes on high pressure.

When they're done take out the trotters and separate the meat and tissue from the bones when cool.

While those are cooling put everything else in the IP.
Don't forget the caramelized onions...

Pulse the trotters material into a homogeneous mass.

Add to the IP and, stirring occasionally, set on slow cook high for about an hour to cook the carrot. The trotter stuff will cook into not so white looking.

When it's done serve over potato or rice.

How many people would you say this serves?
And the cutting half a trotter into thirds part of the instructions I’m guessing from looking it’s in half lengthways and then one of those halves into three parts?
Are they easy to cut?

It would serve, given your lot, probably two. Depends also on how much carbs you're serving it on. I buy the trotters already cut like that. I see them at other markets just split lengthwise and those will fit in a normal pot. I've got a 3 qt IP so it's small.

The largest bone is about the size of my little finger.

Just watched Michel Roux cooking trotters. He cooked them whole, simmered for 4 hrs. The bones then easily slipped out. So, I'm sure if you cook yours whole in the instant pot on pressure cook as in Barriehie's recipe, you can do the same. Not really much point in chopping them up I don't think. As Barriehie said, his just happen to come like that.

I noticed Morrisons sell trotters. £2.25. That's about $2.98

Thanks, I was thinking along the same lines. Apparently they are not easy to cut 🤷‍♀️

So far I’ve only had one poor order from them but yes none of it’s a given now 😔

£2.25 is good value but only if they’re worth eating 😂
I think a trotter is probably a trotter. It has the buggery cooked out of it and what remains is a piggy gelatinous ingredient.

That's how I do them. Simplest way unless precut. Trotters are pretty available in these parts as they're a basic ingredient in NewMex/Mex cooking which is good 😁

No, I usually just tear them into bite size pieces but this recipe was presented for SandwichShortOfAPicnic who's trying to introduce trotters to someone with an aversion. These were processed to alleviate the "What's this?".

That's how I always do them. Only simple way unless precut. Trotters are pretty available in these parts as they're a basic ingredient in NewMex/Mex cooking which is good 😁
Yes on availability. I first saw them at La Bonita market in Las Vegas and prior to that never gave them a thought.

Ive noticed that depending on the store, they may offer cut up feet and cut up tripe for menudo and other similar dishes. The whole tripe often comes in big 3-5 lb frozen blocks that require thawing out a bit before cutting up but pre cut up it can all just get thrown into a stewpot of boiling water 🙂

The honeycomb tripe isn't frozen and they'll cut off whatever you want. The one I got isn't the honeycomb and it's frozen in blocks around 1/2 lb.

They sell goat meat but I tried it a year ago and wasn't enthused enough with the flavor to warrant, at that time, $10/lb. At that price it wouldn't be something I could pursue even if I did like it.
