An embarrassingly simple recipe....but tastes good which is all that matters.

Ingredients

4 beef cheeks
2 cups red wine
1 cup beef stock
1 large onion coarsely chopped
5 cloves garlic slightly crushed
1 can chopped tomatoes
3-4 sprigs thyme
2 bay leafs
1/2 tsp cocoa powder

Method

Preheat oven to 150 degrees celsius. Season beef cheeks with salt and pepper and brown (in a large oven proof pot) on stovetop in a little oil. Remove beef, and add onions, garlic, thyme, and bay leaf and saute a few minutes. Add beef back to pot, along with tomatoes, red wine, and stock. Put lid on pot, and place in oven and leave until cheeks start to become tender (3-3 1/2 hours). Gently, without breaking them apart, turn over beef cheeks. Stir in cocoa powder (again, do this gently). Taste and adjust for seasoning. Place back in oven and continue braising another 30-40 minutes partially removing lid if liquid needs to be reduced more. Serve with pasta, or mash, etc, with plenty of the braising liquid.

Simple is good! I like a recipe that I can throw together that tastes great, and this certainly looks like it would.

1/2 tsp cocoa powder

I forgot about this technique, which I've used when making beef chili. It adds a richness that isn't immediately obvious, but certainly is appreciated.
