Recipe Buratta, asparagus and strawberries with black rice vinegar

This is very simple to make. I reckon when you have a such a delicious ingredient as burrata, it doesn’t need complicating. The strawberries in black rice vinegar provide a sweet and slightly malty tang which contrasts well with the creamy cheese. Ingredients are approximate depending on the ratio of strawberries and asparagus you prefer.

Ingredients (per person)
1 whole burrata cheese, drained
4 - 6 strawberries halved or sliced
1 tbsp black rice vinegar
A handful of asparagus
A few slices of pickled radish (optional)
Ground red peppercorns
A little grated orange zest

Method
  1. Place the strawberries in a bowl and add the vinegar. Mix so that all the strawberry pieces are coated. Leave to seep for 30 mins.
  2. Steam the asparagus (I use the microwave). Allow to cool to room temperature.
  3. Place the asparagus on a plate and top with the burrata.
  4. Add the strawberries lightly drained and sprinkle the remaining vinegar over the burrata.
  5. Add pickled radish (if using) and sprinkle the dish with ground red peppercorns and orange zest
