I wanted to write down this recipe because Wombat457 had requested I would. So here it is. It's a festive version of mashed potatoes, so pretty creamy and cheesy.
What you need:
750 gram floury potatoes
250 ml cream
50 grams butter
200 grams cheddar of your choice, I used mature British cheddar
4 tablespoons chopped green herbs
1 tablespoon smoked paprika powder
1/2 teaspoon grated nutmeg
Salt & pepper to taste
How to prepare:
1. Preheat oven to 200 celcius, upper and lower heat. Peel, dice potatoes in small dice, and cook the potatoes about 10 minutes or long enough to be pierced easily by a fork.
2. Drain the potatoes and put them back in the pan to make the mash. Mix in the cream and butter, plus seasonings. When the mash has the right consistency, add grated cheese and mix well.
3. Butter or oil a baking dish, and pour the mashed potatoes in. Smooth over so it's equal everywhere and use a fork to get some nice ridges for cheesy crust going.
4. Bake for 15 minutes or until golden brown on top.
5. Serve and enjoy!
