Cheese for cheesesteak sandwiches

I don't discredit that it probably tastes good, but I like my cheesesteak sandwiches with white cheese and am not fond of a cheddar flavor or American cheese flavor on them. I don't know what the stuff in the bottle tastes like but I am going to guess it doesn't taste like provolone. I added a little smoked gouda to mine because I wanted a smoky flavor (I also added a touch of smoked salt) but most of the time it's just prov.
Didn't know came in a jar but then I never look for cheese that's not in a refrigerator. 👍
I sometimes buy that shelf-stable Velveeta copycat "cheese" food from Aldi (it's called Clancy's) because it makes a great base for cheese sauce without using a roux. I hate flour and corn starch thickeners in general, but especially in a cheese sauce. I use just a small section of the loaf--probably 3 TBSP. It binds with the cream and other cheeses I use in my sauce to make the sauce smooth and creamy.
 
I tried it once when I was about 10 on a cracker. Never again.
I know that stuff, but I don't think that's what I was referring to. Isn't there like a cheddar color sauce that often goes on cheesesteaks? I'm not talking about aerosol cheese in a can that has a 4,800-year shelf-life.

Msmofet, we also use Cheez Whiz and not just for cheesesteaks. When tomatoes are in season, we toast a slice of bread and then spread on a layer of Cheez Whiz, put it under the broiler and cook until Cheez Whiz is brown and bubbly, remove from oven and top with a slice of garden fresh tomato. A favorite summer lunch / snack.

I used to like to make taylor ham pork roll, scrambled egg and cheez whiz on a buttered toasted english muffin.
