Recipe Cheeseburger salad

I love making this salad in the summertime. It’s a little bit healthier than your typical cheeseburger with additional vegetables and no bun. Recipe adapted from Skinnytaste.

Ingredients:

1 lb ground beef
4 cups chopped romaine lettuce
4 dill pickle spears or 1 large whole pickle, chopped
1/4 of a red onion, thinly sliced
1 avocado, cubed (optional)
1 cup halved cherry tomatoes
1/2 cup shredded cheddar cheese

Dressing:

1/4 cup mayonnaise
1 tsp mustard
1 tsp dill pickle juice
4 tsp ketchup
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp paprika

Method:

Combine all dressing ingredients in a small bowl and set aside. Season the beef with salt and pepper and divide into 4 patties. Cook patties using whichever method you like (we usually grill them) until done. Let them rest for a few minutes to allow juices to redistribute. Cut each patty into bite-sized pieces.

Add lettuce, pickles, onions, avocado, tomatoes, and cheese to individual serving plates. Top each with a chopped patty, drizzle with dressing, and enjoy! Makes 4 servings.
