Simple but delicious. Serve as a side or a light lunch
Ingredients
2 zucchini halved lengthwise
120g ricotta
1 garlic clove crushed
1/4 cup toasted pine nuts
1/4 cup grated parmesan
2 teaspoons chopped dill
Method
Preheat oven to 180C / 350F fan force
Using a teaspoon scoop out the seedy flesh from the zucchini
Lightly chop the toasted pinenuts & put in a mixing bowl with remaining ingredients. Mix all together & season to taste
Put zucchini halves into a baking dish & spoon the mix into the scooped out hollow. Lightly drizzle with olive oil &, bake for about 20 mins
